Mika was not expecting Christmas gifts, but when he woke up he saw a few gifts under the tree for him. It wasn't much but I wanted to make sure he had a Christmas. A simple and inexpensive holiday. Merry Christmas Mika!
I've known my husband for 15 years and it still puts a smile on my face. Mika has his charms that would make any girl feel giddy and pretty. I've met him in high school but not really met in the physical way of meeting someone. I saw him and his brothers hanging out at Hukilau Beach in Hawaii, which is where I'm from. And that was it! I didn't have any interaction with him after that. I know that may seem weird but that's partially what happen for our so called first meet. A few days after that, I saw my husband and his siblings at my high school Fall Concert. I still did not met him, just saw his sisters in the girls room and I did my own thing with my friends. During the concert one of my dear girl friend introduce her cousins, who were visiting from California and they are performers themselves, to sing for our school and thats when I the saw the same guys from the beach on stage singing. I thought that was cool and did not pay no mind to it. They sang a few numbers and than I went up to sing with my high school choir and had a jolly good time. After the concert, I was in charged to collect props we used during the concert from all the choir members. It was a bit hard since everyone wanted to meet with the new people and make new friends. I didn't care to mingled cause I had to head back home for something important. So when I came to my girl friend who was talking with her cousins (which is my husbands siblings) I told her that I'm collecting props and I needed to get the last one she was wearing. That's where I met a few of my husbands brother and sisters. I said hi to them and I talked to his younger brother who I remember at the beach. We exchange small talk and I left. That's my side of the story. lol But a few weeks later, my friend told me that her cousin wanted to write to me if that was ok. I didn't mind cause I like making new friends. So she gave me a letter and thats where things started for my husband and I. We were pen pals for awhile, than became good friends and soon we started to date. Yes, we dated even though it was a long distance relationship. It was hard at first, but we managed. Talking on the house phone for hours using calling cards, writing letters every other week, sending packages was just a few things we managed to do for the first year. Our friendship started small and grew from there. After 4 years of ups and downs together, we made it official and got married. Now it's been 15 years of knowing each other and I would say it has been good. Marriage is not perfect, but a strong friendship could make everything a bit better. I'm happy to have my husband in my life. I appreciate everything he has done for me. I hope we will continue to learn and grow together. He is my rock, my heart and my love. Thanks for being YOU! My first Attempt in making English scones!! It's a success! Taste just like the ones I are at the London market!! Oh I'm in heaven now!!!
English Scones
Ingredients
- 350g self-raising flour, plus more for dusting
- ¼ tsp salt
- 1 tsp baking powder
- 85g butter , cut into cubes
- 3 tbsp caster sugar
- 175ml milk
- 1 tsp vanilla extract
- squeeze lemon juice (see Know-how below)
- beaten egg , to glaze
- jam and clotted cream, to serve
Method
- Heat oven to 220C/fan 200C/gas 7. Tip the flour into a large bowl with the salt and baking powder, then mix. Add the butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in the sugar.
- Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla and lemon juice, then set aside for a moment. Put a baking sheet in the oven.
- Make a well in the dry mix, then add the liquid and combine it quickly with a cutlery knife – it will seem pretty wet at first. Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it’s a little smoother. Pat into a round about 4cm deep.
- Take a 5cm cutter (smooth-edged cutters tend to cut more cleanly, giving a better rise) and dip it into some flour. Plunge into the dough, then repeat until you have four scones. You may need to press what’s left of the dough back into a round to cut out another four.
- Brush the tops with beaten egg, then carefully place onto the hot baking tray.
- Bake for 10 mins until risen and golden on the top. Eat just warm or cold on the day of baking, generously topped with jam and clotted cream. If freezing, freeze once cool. Defrost, then put in a low oven (about 160C/fan140C/gas 3) for a few mins to refresh.

My first attempt to make Hawaiian Chex Mix...it turned out ok since my hubby and twin bro ate a big portion of it...so I made more for them to have a sweet & salty snack this week. Gotta love making treats from memory but most importantly having Ginnie pigs (Mika & Henry) to eat it even just to make sure it tastes good!?! Hehehhee #familymoment — in South Salt Lake City.
Hawaiian Chex Mix
Ingredients
- 5 cups rice chex
- 5 cups corn chex
- 3 cups arare, optional
- ½ bottle nori furikake
- ½ stick of butter
- 2 tablespoons sugar
- ¼ cup canola oil
- ¼ cup karo light corn syrup
- 2 tablespoons soy sauce
Instructions
- Preheat oven 250 degrees.
- Use a large roasting pan, or use (2) 9 x 13-inch baking pans. Mix together rice and corn chex cereal with arare. In a medium sauce pan, add butter, sugar, oil, corn syrup, and soy sauce; cook over medium heat until sugar dissolves.
- Carefully drizzle mixture, a little at a time, over cereal and toss. Keep adding mixture until cereal is evenly coated. Then sprinkle furikake over mixture until coated; toss together.
- Bake for about 1 hour. Continue to toss mixture at least 3 times throughout, or every 20 minutes. Be sure to scrap bottom of pan when mixing to prevent burning.
